MEXIMELONY SALAD
Ingredients
Watermelon 2 cups cut into dices or cubes
Olive oil 2 tsp
Garlic 2 cloves chopped
Tomatoes 2 nos chopped
Tomato puree 2 tbsp
Mixed herbs 1 tsp
Salt and pepper to taste
Chili flakes 1 tsp
Method
Heat oil, sauté the garlic, add in tomatoes, herbs, chili flakes, tomato puree, salt and pepper and simmer for 3-4 mins. Add in the melon cubes and mix well and cool. Serve with toasted garlic or French bread.
