Ingredients
Fresh methi leaves 1 cup chopped
Fresh coriander leaves ½ cup chopped
Oil 2 tsp
Garlic 1 tsp chopped
Onion 1 small chopped
Tomatoes 2 chopped
Green chilies 1 chopped
Capsicum ½ no chopped
Grated coconut 2 tbsp
Coriander powder 1 tsp
Cumin powder 1 tsp
Turmeric powder 1 tsp
Red chili powder 1 tsp
Salt to taste
Boiled or left over rice 2 cups
Curry leaves 10-12 nos
Method
Heat oil, add in the garlic, onion, chilies and curry leaves. Add in tomatoes, all powdered masalas and salt to taste. Mix well add in the rice, coconut and stir well. Finally, mix in the capsicum and cover and cook for 3-4 mins. Remove and serve hot with pickle and raita.
