LITCHI LONGINES
Ingredients
Fresh litchies 10-12 nos
Milk 500 ml
Sugar 1 cup
Basmati rice paste 2 tbsp
Raisins 2 tbsp
Cashews 2 tbsp
Mawa 2 tbsp
Gin / vodka 2 tbsp (optional)
Method
Boil milk with sugar, add in the raisins and rice paste and mix well, add mawa and cook for around 20 minutes and stir continuously using a round spoon. Cool the mixture and add in the freshly sliced litchis and a couple of spoons of gin or vodka. Garnish with cashews. Serve chilled scoops of this pudding.
