FRUITY LITCHI SALAD
Ingredients
Lychees 10-12 nos fresh
Musk melon 1 cup sliced
Mango slices 8-10 nos

For the dressing
Olive oil 2 tbsp
Lime juice 2 tbsp
Salt and pepper to taste
Mustard paste 1 tsp
Rock salt 1 pinch
Mint leaves 4-5 nos
Method
Peel the lychees and remove the centre core, and rinse with cold water and keep aside. Slice the melon and mangoes and mix up all the ingredients for the dressing in a bowl. Toss together just before serving and garnish with mint and serve chilled.
