Method
To prepare the pepper chicken
Clean, wash, and marinade the chicken with the listed ingredients, keep aside for 20 mins. Heat in a pan and sear the chicken along with the marinade or a high flame for a few minutes. Cover and cook for 2-4 mins and remove. Add in the shredded peppers and mix. Check for seasonings mix with the reduced cooked thai curry.
To prepare the soya wraps
Prepare a smooth and pliable dough and rest for 15mins. Divide into 8 equal portions and roll out to a 6 inch diameter roti and cook on a tava on both sides. Remove and keep aside.
To assemble the wraps
Take each prepared wrap spread a layer of the date and walnut spread, top with peppered chicken, wrap and fold secure the edges cut into 2 or 3 slices. Arrange on a serving plate, garnish appropriately and serve hot.
VARIATIONS: Try chicken tikka with the date and walnut spread. Baked grilled flaked fish and prawns go well in the same recipe too.
