TOMATO AND PEPPER DIP
Ingredients
Tomatoes 2 nos roasted on the gas and chopped
Red / yellow / green capsicums ½ each roasted on the gas and chopped very finely
Garlic 1 tsp chopped
Salt and pepper to taste
Tomato ketchup ½ cup
Red chili sauce 1 tbsp
Mixed herbs 1 tsp
Spring onions 2 nos chopped
Method
Roast the vegetables and chop them finely, combine the other sauces and ingredients in a bowl and mix well. Chill until served. Offer this dip with some French bread slices or some brown bread crisps.
