STIR FRY PEPPER CHICKEN WITH PEANUTS
For the marination
Oil 2tbsp
Salt and pepper to taste
White wine 2 tbsp (optional)
Lime juice 2 tbsp
Honey 2 tbsp
Soya sauce 2 tbsp
Tomato ketchup 2 tbsp
Chili sauce 2 tsp

For the stir fry
Beans sprouts 1 cup
Assorted peppers ½ cup
Baby corn 8-10 nos sliced(blanched)
Garlic 1 tsp chopped
Ginger 1 tsp chopped
Oil 2tbsp
Roasted crushed peanuts ¼ cup
Spring onion greens 1 tbsp chopped
Method
Marinate the chicken, keep aside for 10-15 mins. Heat oil, sauté garlic, ginger add in the marinated chicken, sauté on a high flame for few seconds add in some sprouts, peppers blanched corn, seasonings and cook for 3-4 mins. Remove serve hot garnished with peanuts and spring onion greens.

VARIATIONS: try a similar variation with tofu, paneer, peppers and sprouts for vegetarians. To add a more spicy taste to flavor add some Thai curry paste ( red/ green) while stir frying it.
