SOYA CAPSICUM DELIGHT
Ingredients
500 gms Soya bean chunks (boiled)
1 tbsp garlic (chopped)
2 tbsp spring onions (chopped)
2 tbsp green spring onions (chopped)
1 cup shredded red / green / yellow capsicum
2 tbsp butter oil
Soya sauce to taste
2 tsp chili sauce
Tomato sauce to taste
2 tbsp tamarind (imli) chutney
1 tsp chat masala
Pepper to taste
Flat puries
Salt to taste

For garnishing:
Lettuce / parsley / baby potatoes / olive wedges
Method
Heat oil / butter in a pan, sauté the garlic for a few seconds, add the onions, sauté for a while. Add the boiled drained Soya chunks, stir fry on a high flame. Add the sauces, mix well and adjust seasonings to taste. Add the tamarind chutney, simmer, cover and cook for 8-10 mins. Add the shredded capsicums just before removing from flame. Serve hot, garnish appropriately.

Chef’s variations: Try mushrooms and baby potatoes ot the same garnish with sliced baby corn. Chicken chunks, with cubed peppers taste good too in the same recipe.
