SAI BHAJI SOYA BAKE
Ingredients
Sai bhaji 2 cups (regular sindhi style)
Soya bean (granules) 1 cup (soaked in hot water for 20 mins)
Soya bean (chunks) 1 cup (soaked in hot water for 20 mins)
Chopped garlic 1 tsp
Chopped ginger 1 tsp
Chopped green chilies 1 tsp
Oil 2-3 tbsp
Red capsicum ½ no diced
Green capsicum ½ no diced
Dry red chili 2-3 nos
Garam masala powder 1 tsp
Salt to taste
Grated cheese ¼ cup
Olives 8-10 nos (green and black –sliced)
Method
Heat oil, sauté ginger, garlic, onion, red chili add in the soaked and drained soya bean chunks and granules. Sauté for 10 mins and add in the sai bhaji, capsicums, garam masala powder, salt to taste and keep aside. Grease a baking dish, spread a layer of the soya sai bhaji sprinkle sliced olives and top with grated cheese. Bake in a per-heated oven for 10mins at 150 degrees C / 300 degrees F. Serve hot.

VARIATION: Try similar bake with bhi aloo, fish in sindhi methi garlic masala for a variety of baked dishes.
