RUSSIAN SALAD CANAPES
Ingredients
Bread croutons-toasted or fried 12-15 nos
Carrot ½ cup chopped
Beans ½ cup chopped
Green peas ½ cup chopped
Potato ½ cup chopped
Apples ½ cup chopped
Cherries ½ cup chopped
Lettuce 4-5 no
Veg mayonnaise ½ cup
Method
Boil all the vegetables. Drain and season well. Mix with the veg mayo and cherries. Keep the croutons in a plate and put a small lettuce bed. Spoon on the Russian salad and garnish with a small curl of parsley and boiled egg (optional).
