PRAWN COCKTAIL
Ingredients
Small prawns shelled and deveined 1 cup
Mayonnaise ½ cup
Tomato sauce 2 tbsp
Brandy 2 tsp
Boiled egg 3 nos
Lettuce and parsley a few
Method
Boil the prawns and cool. Refrigerate for 3 hrs. Mix the mayonnaise, tomato sauce and brandy, check seasoning. Add prawns and mix. Butter a crouton and put some shredded lettuce on top. Arrange the prawns on top and then garnish with slices of boiled egg and parsley.
