PEACH TARTS
Ingredients
Short crust pastry 200 gms rolled out into ½ inch thick sheet
Tart making tin 1 no

For the filling
Fresh sliced peaches 2 cups
Green cardamom powder ½ tsp
Castor sugar 2 tsp
Mint leaves 5-6 nos
Custard 1/3 cup
Brown sugar 2 tsp
Butter 2 tsp
Method
Roll out the pastry and spread into the tart tin. Apply a little melted butter or beaten egg on the pastry. Heat the butter in a pan, sauté the sugars and peach slices, add honey and cardamom, mint leaves and remove. Place thick custard on the pastry sheet and top with peach mixture. Bake in a pre-heated oven at 150 degrees C for 20-25mins. Remove, slice and serve warm.
