PEACH COBBLER
Ingredients
Peaches 3-4 nos peeled and seed removed

For the stuffing of the peach cups
Crumbled chocolate fruit cake 1 cup
Assorted chopped nuts 2 tbsp
Honey 2-3 tbsp
Chopped cherries 2 tbsp
Rum or wine 2-3 tbsp
Mint leaves 10-12 nos chopped
Whipped cream to top
Cinnamon powder for garnish
Method
Prepare the peach cups and poach them in a little sugar syrup for a few minutes to make them a little softer. In a mixing bowl combine together the cake, nuts, honey and other ingredients and mix well. Stuff the peach cups with the cake filling and top with freshly whipped cream and garnish with cinnamon powder and serve at once.
