Method
To prepare the cheesy olive filling combine together the cream cheese, grated cheese, and crumbled cottage cheese or paneer in a bowl. Add the black olives, chaat masala and coriander and mix well.
Prepare samosas of the desired size the usual way, cocktail sizes are ideal for a snack party.
Deep fry them in moderately hot oil until golden brown. Drain excess oil.
Arrange on a serving plate. Push toothpicks into each samosa to make it look more presentable and to ease the service. Garnish with black olives, parsley sprigs, etc.
Tomato chili dip:
To prepare this, mix the tomato sauce and chilli sauce and garnish with diced yellow pepper.
Serve chilled with the hot samosas.
Chef’s variation:
For vegetarians: mix vegetables of your choice with the cheese fillings.
For non vegetarians: chicken tikka with cream cheese tastes great as a filling too!
