MUSHROOM POTATO SOUP
Ingredients
Fresh button mushrooms 1 cup
Potatoes cut into small cubes 1 cup
Chopped garlic 1 tsp
Chopped spring onions 1 tbsp
Soya sauce 1 tsp
Chicken/veg stock 5 cups
Maggi cube (lemon masala) 2 nos
Butter 1 tbsp
Bread croutons/chopped coriander for garnish
Crushed black pepper ½ tsp
Celery 1 tbsp chopped
Heat butter in a pan, sauté garlic, onion, until translucent, add the potatoes, sauté add celery, maggi lemon masala cubes, stock or water , bring to a boil, when potatoes are half done, add the mushrooms. Cook for another 5-7 mins. Portion out and garnish with sautéed fresh mushroom, crushed black pepper and parsley.
