minted green corn salad
Ingredients
2 cups american corn,boiled or canned
1 cup boiled and chopped spinach leaves
Salt to taste
½ tsp white pepper powder
2 tbsp fresh basil leaves
1 tsp chopped garlic
1 small onion chopped
2 tsp oil
1 tbsp butter
½ tsp chili flakes
2 tbsp fresh mint leaves
1 no lime juice
½ tsp mustard paste
2 tbsp olive oil
Cherry tomatoes for garnish and presentation
Method
1] boil the corn or use canned american corn.
2] boil the spinach leaves seperately and chop them finely.
3] heat oil and butter in a pan,saute the garlic and onion for a minute and add in the boiled spinach and corn.
4] add salt,pepper,red chili flakes,fresh basil leaves,olive oil and stir well.
5] cook for 2 mins and remove from flame,allow to cool.
6] add in the fresh mint and lime juice with mustard paste,toss well.
7] finally present the salad warm or chilled garnish with red cherry tomatoes.
