LITCHI AND DATE MOUSSE
Ingredients
Litchi crush ½ cup
Fresh litchi puree ½ cup
Homemade custard with milk, sugar and custard powder 1 cup
Gelatin 2 tsp melted
Whipped cream 2 tbsp
Date puree ¼ cup
Fresh dates for garnish
Method
Mix together the litchi crush, puree, date puree and custard mix well. Add in the cream and fold it in. finally add in the melted gelatin or you can use plain china grass or agar. Mix well and pour into moulds and set for around 6 hours. Garnish with a fresh date.
