indo chili baby corn fritters
Ingredients
1 cup fresh or canned baby corn
Salt to taste
½ tsp white pepper powder
For the batter
1 cup maida
½ cup cornflour
Salt to taste
1 tsp oil
Water as required
1 pinch of baking powder

For frying the fritters
400 ml oil

For the sauce
2 tsp oil
1 tsp chopped garlic
1 tsp chopped ginger
1 small onion,chopped
1 tsp chopped green chilies
1 no red/green/yellow capsicums cut into strips
Salt to taste
White pepper to taste
Ajinomoto as required
Red chili sauce as required
Soya sauce as required
Spring onion greens for garnish
1 cup veg stock as required
½ cup cornflour powder with water to make it thick
Method
1] wash the corn,cut them into even pieces,apply a little salt and pepper and keep aside.
2] in a mixing bowl,combine together the flours,water,salt,oil some recipes also use egg and beer for their batters.
3] dip the corn in the batter and deep fry on a medium high flame for 2-3 mins.
4] drain off the excess oil and keep the corn aside.
5] in a pan,add oil add garlic,ginger and green chilies,saute and add in the onions.
6] add in the stock,sauces and bring to a boil.
7] add in the cornflour solution and thicken it up.
8] add in the strips of colorful capsicums and babycorn.
9] cook for another 2 mins.
10] add in the spring onion greens and serve hot.
