HARE CHUTNEYWALA PENNE PASTA
Ingredients
2 cups penne pasta boiled
For the hare chutney
1 cup chopped coriander leaves
2 tbsp chopped mint leaves
2 tsp chopped garlic
Salt to taste
2-3 tbsp lime juice
2 medium sized tomatoes grated
3 tbsp cashewnuts or pinenuts
1/4th cup basil leaves
½ cup olive oil
Blend all above into a smooth paste and keep refrigerated until used.

For the finishing of the pasta
2 tbsp olive oil
Salt to taste
½ tsp red chili powder
½ tsp turmeric powder
1 tsp coriander powder
½ cup grated cheese
Method
Prepare the hare chutney as per the ingredients listed above. Boil the penne pasta and keep aside. To finish the dish , heat oil in a pan, sauté the powdered spices with the green masala and cook the same for 3 to 5 mins on a low flame. Add the pasta into it once the oil floats, cook for 5-7 mins and remove. Finally blend in the grated cheese and garnish with either fresh basil or cherry tomatoes and serve hot. Serve with French bread or dinner rolls.
