GADO GADO SALAD
Ingredients
Boiled baby potatoes 1 cup (peeled)
Cabbage leaves 1 cup (blanched)
Spinach leaves 1 cup (blanched)
Carrot 1 cup (sticks) (blanched)
French beans ½ cup (blanched)
Cauliflower 1 cup (blanched)
Broccoli 1 cup (blanched)

For the peanut sauce
Peanut butter 1 cup
Soya sauce 1 tbsp
Chili flakes 1 tsp
Crushed peanuts ½ cup
Stock/water ½ cup
Seasonings to taste
Oil 2 tbsp
Garlic 1 tsp
Method
To prepare the vegetables, cut wash and blanch all the vegetables separately and keep aside.

To prepare the sauce, heat oil sauté garlic, add in the peanut butter, Soya sauce, chili flakes, stock/water, salt and pepper. Simmer for 8-10 mins, serve warm with the vegetables serve with crispies.

VARIATIONS: try a similar variation with sautéed chicken cubes sausages assorted grilled seafood etc.
