EXOTIC FRUIT TARTS
Ingredients for sweet pastry base
Castor sugar 240 gm
Butter 120 gm
Milk 200 ml
Maida 480 gm
Salt a pinch
Method
Cream together the butter and sugar. Fold in the sieved maida and the mix lightly with the fingers. Slowly add the milk and salt and make dough. Roll thin and put into greased tart moulds. Prick with a fork and bake at 180 degrees for 15-20 mins.

Ingredients for sweet pastry base
Milk 1 litre
Sugar 200 gm
Custard powder 90 gm
Vanilla essence 1 tsp

Mix the powder with a little cold milk / water and make a paste. Boil the milk and add sugar. Stir in the custard powder and whisk until custard is formed. Add the essence and cool down immediately. Fruits such as kiwi, plums, strawberry and pomegranate give attractive results. Slice these fruits thinly and keep ready. Just pour a little custard into each tart shell and then cover it nicely with the sliced fruit. Garnish with a few pomegranate seeds.
