Ingredients
15-20 pieces of baby corn (boiled and cut diagonally)
350 gm paneer / tofu (cut into cubes)

For garnishing:
2 cups moong / bean sprouts (boiled)

To serve with:
10-12 nachos / flat sev puries

For dressing:
2 tbsp honey
2 tbsp lime juice
1 tsp chaat masala
1 tsp cumin powder
½ tsp paprika powder
½ tsp chili flakes
½ cup olive oil
2 tbsp wine / whisky (optional)
Salt and pepper to taste
Boil the baby corn and the sprouted moong until just cooked. Do not overcook as they lose their crunchy texture then.

Cube the paneer or the tofu and keep aside.

To prepare the dressing blend all the ingredients together. Chill for 10-15 mins. Toss the ingredients well with the prepared dressing and adjust seasonings to taste. Dress the preparations on serving plate, garnish with nachos / flat sev puries and tomato slices, and offer tomato sauce, yogurt and tamarind chutney separately if desired.

Chef’s variations:
For non vegetarians: roasted, grilled chicken, or simply tandoori chicken can be used. It should be boneless shredded / cubed. Chicken on mutton livers sautéed with onion and garlic, can be prepare similarly too. Poached / grilled fish with shrimps taste good too in the above dressing.
