corn cucumber mexican salsa salad
Ingredients
2 cups american corn,boiled or canned
1 no cucumber,peel and cut into small dices
2 nos tomatoes,remove seeds and cut into small dices
1 tbsp fresh mint leaves
Salt to taste
½ tsp white pepper powder
2 tbsp olive oil
2 tbsp lime juice
1 tsp mustard paste
100gms paneer
50gms boiled rajma
3-4 tbsp tomato ketchup
1 tbsp red chili sauce
Method
1] boil the corn or use from the can.
2] in a mixing bowl,combine together the corn,cucumber and tomatoes also mix in the mint.
3] add in all the seasonings and herbs and toss well
4] add in the boiled rajma and crumble the paneer also and mix it well.
5] finally add in the ketchup,lime juice,red chili sauce and toss the salad.
6] arrange the salad on a bed of lettuce leaf or in a serving bowl,garnish with some fresh mint and serve the salad chilled.
