CHEESY CORN AND PEPPER BAKE
Ingredients
2 cups american corn,boiled or from can
½ no red capsicum,cut into small dices
½ no yellow capsicum,cut into small dices
½ no green capsicum,cut into small dices
1 cup white sauce
½ cup grated cheese
2 tbsp butter
1 tbsp oil
1 small onion,chopped
1 tsp garlic,chopped
Salt to taste
½ tsp white pepper powder
½ tsp mixed herbs
½ tsp red chili flakes
½ cup fresh cream
Method
1] boil the corn using a microwave or pressure cook for around 20 mins,ideally readily available corn cans can also be used to prepare this recipe.
2] in a pan,add some oil and butter and saute the garlic and onions for a few seconds.
3] add in the corn and capsicums and saute them for 1 min.
4] add salt,pepper,mixed herbs and red chili flakes,stir well.
5] add in the prepared white sauce and cream.
6] cook the mixture together for around 3-5 mins on a low flame.
7] pour the mixture into an ovenproof dish and top with cheese and bake for around 10 mins at 180 degrees centigrade in a regular oven or micro on a high for 3 mins.
Serve hot with french bread or garlic toasts.
