BHI AND PEPPER SATAY
Ingredients
Bhi (lotus root) 250 gms (sliced/boiled)

For the marinade
Olive oil 2 tbsp
Mustard paste ½ tbsp
Crushed black pepper ½ tsp
Chat masala powder ½ tsp
Salt to taste
Red chili powder ½ tsp
Lime juice ½ tbsp

For the satay sauce
Peanut butter 1 cup
Crushed peanuts 2 tbsp
Stir fry sauce ½ tbsp
Soya sauce ½ tbsp
Chili flakes ½ tsp

For the satay accompaniment
Red / yellow / green capsicum 1 no each (diced)
Cottage cheese (paneer) 250 gms (cubed)
Satay sticks 12-14 nos
Method
Clean wash and boil the bhi until well done and apply the marinade and keep aside. Skewer the cottage cheese, pepper and bhi onto the satay stick and cook on hot tava or griller. Coat with satay sauce and serve hot on a well decorated platter.

VARIATION: try a similar recipe with baby corn, mushroom, capsicum, chicken liver etc.
