Butter Cookies
1 cup butter (salted butter is ideal)
1 cup white sugar (brown sugar can also be used)
1 egg, use with the yolk
2 2/3 cups refined flour
ΒΌ tsp salt
2 tsp vanilla essence
In a large bowl, cream together the butter and the white sugar until light and fluffy. Beat in the egg, and then stir in the vanilla. Combine the flour and salt, stir into the sugar mixture. Cover dough, and chill for at least one hour. Chill cookie sheets. Preheat oven to 400 degrees F (200 degrees C). Press dough out onto un-greased, chilled cookie sheets or pipe out the butter cookie mixture on the baking trays and bake. Bake for 8-10 mins in the pre-heated oven, or until lightly golden at the edges. Remove from cookie sheets to cool on wire racks.
